1. Makhane Ki Kheer

As part of Navratri Recipes Special, we bring to you “Makhane Ki Kheer”, one of the popular fasting recipes. Makhana is also known as foxnuts or puffed lotus seeds. These foxnuts are nutritious and easy to digest. Makhane ki kheer is traditionally made during Indian fastings, such as the Navratri vrat. This is used in both sweet and savory dishes.

Ingredients Required

  • 250 gm Makhana
  • 500 ml full-fat milk
  • 4 Tbps Ghee
  • Almonds
  • Cashew
  • 120 gm sugar
  • 1 pinch Saffron threads
  • 4 cardamom Powdered

Method/ Procedure

  • In a pan,  keep on low flame and add ghee
  •  Add Makhana, almonds, and cashews, roast on low flame till makhana turn crisp and cashews become golden, keep aside
  • When the mixture turns cold, take 1/4th of the mix in a blender and blend into a powder.
  • Add milk to the pan, let it boil, add sugar, cardamom powder, and saffron, the powdered mixture, stir and cook for 1 minute
  • Add rest of the mix, cook for 10 minutes, makhanas will turn soft, keep on low flame for 4-5 minutes. Enjoy making this and other easy Navratri vrat recipes today.

2. Sama Ke Pulao

As part of Navratri Recipes Special, we bring to you “Sama Ka Pulao”, one of the popular fasting recipes. Sama is also referred to as vrat ke chawal. Since we don’t eat cereal grains during fasting, samvat or sama grains are used instead of rice to make rice-based dishes. Barnyard millet is the English name for Sama ke chawal. Vari, varai, sanwa, samwa, are some of the other Indian names for barnyard millet.

Ingredients Required

For Pulao:

  • 1 cup water, sama rice, or barnyard millet (for soaking)
  • 1 tbsp clarified butter/ghee
  • 1 teaspoon cumin/jeera
  • 3 cardamom pods
  • 1 teaspoon pepper
  • 1 pound ginger (finely chopped)
  • 2 chilies (slit)
  • 1 potato (cubed) 
  • 1 carrot (cubed)
  • 2 cup of liquid
  • 1 tsp rock salt (sendha namak)
  • 1 teaspoon powdered pepper

Others:

  • ½ tbsp ghee / clarified butter
  • 2 tbsp peanut
  • 5 almond (halves)
  • 10 cashew (halves)
  • 2 tbsp dry coconut (sliced)
  • ½ cup makhana/fox nuts
  • 1 tbsp lemon juice
  • 2 tbsp coriander (finely chopped)

Method/ Procedure

  • To start, soak 1 cup sama rice for 20 minutes in a wide mixing bowl.
  • 1 tbsp ghee, 1 tsp cumin, 3 cardamom pods, and 12 tsp pepper, heated in a Kadai and slightly saute
  • Now add 1 inch of ginger and 2 chilies to the pan and saute thoroughly. 1/2 potato and 1/2 carrot, sauteed for 3 minutes or until half cooked
  • Toss in the soaked sama rice. Make sure the water is absolutely drained.
  • Pour 2 cup water, 1/2 tsp rock salt or sendha namak, and 1/2 tsp pepper powder, well mixed.
  • Cook, covered, for 15 minutes, or until the sama rice is fully cooked.
  • Heat 12 tbsp ghee in a pan, then add 2 tbsp peanuts, 5 almonds, 10 cashews, 2 tbsp dry coconut, and 1/2 cup makhana, and roast on low heat until crunchy and golden brown.
  • Place the roasted nuts on top of the pulao and add 1 tablespoon lemon juice

3. Kuttu Ke Pakore

Method/ Procedure

  • In a pan, melt the ghee and add the grated papaya. Cook for about 10 minutes.

7. Arbi Ke Kebab

  • Boil arbi in a cooker or pan till soft, peel when done

8. Singhaare Ke Samosa

Ingredients Required

For Dough:

  • 200 gm Singhaare ka aata
  • ½ cup Arrowroot
  • 2 Tbsp Ghee
  • 3 Cups Water
  • Sendha Salt to Taste
  • Oil or Ghee for Deep Frying

For filling:

  • 4 Potatoes Boiled
  • ¾ Cup Chilli Powder (Optional)
  • 1Tbsp Cumin Seeds
  • 2 Tsp Dhaniya Seeds
  • Sendha Namak to Taste
  • 1 Tbsp Ghee

Method/ Procedure

Filling:

  • Heat ghee in a pan, when hot add cumin seeds, let them splutter
  • Add boiled mashed potatoes, add coriander seeds, salt to taste, mix well, keep aside

 For Dough: 

  • Boil 3 cups water in a pan
  • Add flour and Arrowroot
  • Let it accumulate in the center, and form a dough
  • Take off from heat, let it cool

 For Samosa:

  • Roll the dough in a circle of the desired size, cut it into two halves
  • Apply water on the flat side and join them to foe a cone
  • Add the filling, apply filling on the free side and stick them together to form Samosa
  • Repeat for the rest of the dough
  • Deep Fry Serve Hot

9. Kuttu Aur Palak ke Pakode

12. Pumpkin Ki Kheer

Ingredients Required

  • 4-6 Tsp Ghee
  • ½ Cups Cashew
  • 500 gm Pumpkin – peeled and grated
  • 5 Cups Milk
  • 2-3 Tbsp Sugar
  • Few Saffron strands
  • ½ tsp Green Cardamom Powder
  • 2 Tsp Rose Water

Method/ Procedure

  • Take a pan, heat ghee in it, fry cashews, remove once done
  • Add grated pumpkin, sauté till it softens, remove the pumpkin
  • Add milk to the same pan, let it boil on medium heat for 8-10 minutes
  • Keep stirring, scraping sides, and adding in milk
  • Add Cooked pumpkin and saffron, cook for 5 minutes
  • Add Sugar, Cardamom powder, and Cashews, cook for 5 minutes

13. Sooji Ka Halwa

  • Let sooji absorb milk, cover, and cook for 2-5 minutes

  • Simmer down, cook till done

  • Make Singhaara flour batter by mixing singhara flour, salt, pepper and water
  • Make potatoes mixture by mixing rest of the ingredients
  • Divide the mixture in 10 parts
  • Heat oil in a wok
  • Coat Potato mixture in the batter, and deep fry.
  • Strain and serve warm.

  • 3/4 cu grated coconut
  • 1/2 cup peanuts

  • Add all the ingredients in a blender
  • Grind it till smooth paste
  • Add water to get desired consistency

26. Makhana Mix

Ingredients Required

  • 2 cups Makhana
  • 3 tbsp Almonds
  • 3 tbsp Cashews
  • 3 tbsp Raisins
  • 3 tbsp dried coconut slices
  • Sendha Namak to taste
  • 3/4 tsp pepper powder
  • 1/2 tsp Amchoor
  • 1-2 tbsp Ghee

Method/ Procedure

  • In a wok heat some ghee and roast makhanas evenly till crispy
  • Add more ghee and roast almonds and cashews
  • dry roast coconut slices
  • Once done all them in a bowl
  • Sprinkle salt, pepper, and amchoor and mix well
  • Let it cool and serve

27. Lauki ki kheer

Ingredients Required

  • 3 Cups grated lauki
  • 3 tbsp Ghee
  • 1 bowl cashews
  • 1.5 L milk
  • 3/4 Cups Sugar
  • 1/2 tsp cardamom powder

Method/ Procedure

  • In a pan heat ghee and fry the cashews till they are brown
  • Strain Cashews out and add grated lauki
  • Cook till done while stirring occasionally
  • Take off the flame
  • Boil milk, when it thickens and becomes 1-1.25 liters add cooked lauki
  • Let it cook for sometime till it further thickens
  • Add Cardamom powder and garnish with cashews.
  • Serve warm or cold

28. Sweet Potato Laddu

Ingredients Required

  • 250 gm Sweet Potato
  • 1 tbsp Ghee
  • 1 tbsp cashews chopped
  • 1 tbsp Raisins
  • Sugar to taste
  • Coconut Powder

Method/ Procedure

  • Boil, peel and mash sweet potato
  • Heat some ghee in a pan and roast cashews till golden, keep aside
  • Heat more ghee in a pan and roast raisins, keep aside
  • In the same pan add rest of the ghee and sauté for 2-3 minutes 
  • Add sugar, after it melts keep stirring till mixture is devoid of all the moisture
  • Once done take off the flame and let it cool
  • Add cashews and raisins and mix well
  • Grease your palms and make laddus of the mixture
  • Roll the laddus in coconut powder and store.

29. Sabudana Vada

Ingredients Required

  • 1.5 cup Sabudana
  • 1/2 cup Peanuts Roasted

Method/ Procedure

  • In a grind the sabudana to a fine powder, keep in a bowl
  • Course ground peanuts, add in sabudana powder
  • Add rest of the ingredients and make a dough
  • Roll it to a thick circle
  • Cut it in rectangles and deep fry till golden in color
  • serve hot with any vrat friendly dip

30. Sonth ki Chutney

  • 1/2 cup Tamarind
  • 1.5 cups Jaggary

  • Vrat Friendly Chaat Masala to taste

Method/ Procedure

  • Soak tamarind in water till its soft and pulpy
  • Sieve it, add water till its pouring consistency
  • Add rest of the ingredients, keep it on gas and let it boil
  • Keep stirring till its desired consistency
  • Cool it down and store.

31. Vrat ke Momos

Ingredients Required

  • 1/2 cup Sama Rice Flour 
  • 1/2 cup Rajgira Flour
  • Half bowl Pumpkin chopped
  • Half bowl Spinach chopped
  • Half bowl Cucumber chopped
  • Half bowl Carrots chopped
  • Sendha Salt to taste

Method/ Procedure

  • Knead the Sama rice and Rajgira flours together in a soft dough.
  • Boil or Steam Chopped vegetables.
  • Take Vegetables out and add sendha salt in them.
  • Take a small ball size dough and roll it evenly.
  • Place it in your palms, add the filling and seal it.
  • Once all done, steam them for 10-15 minutes

  • 2 Sweet Potatos
  • Water for soaking chips
  • Water for blanching chips

  • Slice the sweet potato and soak them in water.
  • Blanch them
  • Dry them on a cloth piece till they turn hard and translucent.
  • Heat oil in a wok and deep fry the chips.
  • Sprinkle Sendha Salt and Chaat masala on the chips.
  • Serve or store.

33. Raw Banana Chivda

Ingredients Required

  • Raw Banana
  • 1/3 cup Raw Peanuts (Moongphali)
  • 10 Curry leaves
  • Green Chillies , finely chopped
  • 1 tablespoon Sultana Raisins
  • Cashew nuts
  • Whole Almonds (Badam)
  • 1/4 teaspoon Red Chilli powder
  • 1 teaspoon Caster Sugar
  • 1 teaspoon Chaat Masala Powder
  • Salt , to taste
  • Oil , for frying
  •  

Method/ Procedure

  • In a kadai, heat the oil over medium heat.
  • Bananas should be washed and peeled before being grated into hot oil.
  • Fry until golden brown and crisp, about 5 minutes. Set aside after draining on absorbent paper.
  • Peanuts, cashews, and almonds should be fried, as well as green chilies and curry leaves. Fry until they are crispy.
  • Finally, fry the raisins. In a large mixing bowl, combine fried grated banana, peanuts, cashews, almonds, raisins, green chilies, and curry leaves.
  • Salt, red chilli powder, chaat masala, and powdered sugar should all be added to it. Mix thoroughly.
  • Once the chivda has completely cooled, store it in an airtight container.

35. Strawberry Watermelon Juice
